I am aware that this recipe sounds off the wall but I decided to make a version of 'Delicously Ellas' sweet potato brownies and as I am obsessed with granola at the moment it just came to me. I know you'll be thinking granola and sweet potato don't seem like a great combination but trust me they actually do. I have been experimenting for awhile but haven't come up with anything special enough to share until now. Its weird because I knew once the idea came to me it was going to be good. The sweetness of granola gives me that kick I need in the morning, especially when I'm studying every day of the bloody week. I cannot wait for the summer when I will finally be able to experiment way more with food but also be able to get into a regular exercise routine again because at the moment it seems like I have zero time to do anything. I love adding it to a smoothie bowl and top off with loads of fruit. So here we go.
This will make about 4-5 servings depending on how you plan on eating it.
Ingredients:
1/4 of a large sweet potato
2 cups of oats
1 tbs of cacao powder
1 tbs of date syrup (or any other syrup you have handy, maple, rice etc)
1 heaped tbs of almond butter
10 chopped dates
Handful of chopped nuts (whatever's in the press)
Method:
1. Steam the sweet potato until very soft.
2. Add potato to the oats, cacao, chopped dates and nuts and still well.
3. Place the almond butter and the date syrup in a cup and place in the micro wave for about 1 minute.
4. Pour over the oats etc and stir evenly.
5. Place on a tray in the over at 180 degrees for about 10-15 minutes but keep an eye on it and keep stirring to make sure it all gets nice and crispy.
That's pretty much it, very simple actually it has a slightly different taste but its seriously good. Enjoy.

Food in London
So this will be my first post and I thought since I am literally just home from London it would be an easy start. My names Katie Ann, 18 and Irish. I have always loved blogs and have contemplated many times to start one but never have. I know blogging has become the thing of the moment and it seems like everyone's jumping on the bandwagon but this really has been something I have wanted to do for ages and now I've finally plucked up the courage. My main passions are health and fashion as per.
I was just in London for 2 nights and it was amazing, one thing that amazed me the most was the food. I know it sounds very sad but I researched for ages finding places that catered for both vegans and non vegans but it was absolutely worth it.
The first place definitely worth a visit is 'The Banana Tree', we went to one in Soho and it was so surprisingly good. It serves Indochina dishes and also caters for vegans. I got the 'Tamarind Spicy Aubergine' and it was delish-would highly recommend.
On the second morning we had planned to go to 'The Good Life Eatery' which is an absolute gem if I do say so. After spending about half an hour trying to find it we were absolutely starving but it was so worth the wait. I had been dying to try this place, we shared a banana chocolate smoothie. I often make these at home but thing are also 10 times better when they're made for you, I also got the granola bowl with coconut yoghurt. It was such an amazing breakfast and I was surprisingly full after it which believe me is not easy to do. I'm drooling uploading these pictures ahh take me back please.
The last and final place worth a mention is 'Las Iguanas', I can safely say I will be visiting again. We decided to splurge on our last night and go all out which means starters, mains and deserts. Unfortunately I didn't take many pictures of my food (mainly because I was too busy eating it) but the way I feel about that food is slightly worrying. For starters I got the corn chips and guacamole, for main the 3 mushroom fajitas and oh dear god were they good, and for desert the mango sorbet. All round it may possibly one of the greatest meals ever, I know there's something wrong with me but I'm just so obsessed with food.
All in all the food in London is amazing, I know I definitely want to live there at some point in my life and not just for the food don't worry Im not that insane but just the buzz and the lifestyle is amazing.
